So I mean, if you are gonna go for casserole, you kinda got a go for the classic right?  What’s more classic than Green Bean Casserole? “Tuna Fish Casserole” says Phil. Well, yes, that’s true.  But then you have to EAT Tuna Fish Casserole, so…. Grean Bean Casserole it is! And if you are gonna do Green Bean Casserole you might as well do the BEST EVER:

So, I actually followed the recipe, or at least as close to following the recipe as I’ve ever come. 🙂 The only thing I did was switch out the half & half for soy milk, to be nice to phil’s tummy.

Thoughts? It tasted like Green Bean Casserole! But actually, I think it was better than most I’ve had.  At first I thought it was just like all the others, but then as I got into it I changed my mind and decided it was better than others.  Would it have been better with half & half? Undoubtedly so, but if I didn’t know that the half & half had been left out would I have noticed? Definitely not.

For the casserole dinner, Albin and I made Tamale PiE!

It was a good dinner. In fact, it was a good 3 dinners and 1 lunch. We thought the flavors were spot on, although Albin wanted more enchilada flavor than tomato sauce flavor (he can’t wait until the first week in January when we have enchiladas). I thought it was a lot of meat to eat as a stand alone dinner. I went out and bought a head of broccoli to cook up on the side for the second and third meals. Albin agreed, but he thought one solution could be to balance out the amount of meat with more of the cheesy cornbread topping.

We had an incredible Tamale Pie that Albin’s Mom’s friend Mary made when we were in Switzerland. We want to get her recipe at some point. For our next go at casserole, I think I would like to try a more traditional casserole recipe. Maybe you will have a recipe to recommend…
