Tacos

We made our own version of Chicken Tinga Tacos! We made our Tinga sauce using dried ancho chiles, jalapenos, and california peppers. We soaked and cooked them and then blended them together with our sauteed onions, tomatoes, and spices! We added this into our shredded chicken!

Of course, for us no tacos would be complete without my dad’s salsa! So we blended together a quick batch with roasted tomatoes, cilantro, serrano peppers, salt, and a bit of vinegar for that citrus. Yum! The salsa turned out pretty great. We also put together a few fixins such as red onions, lime, cilantro, jalapenos, and some cheese for Nick!

Then we put it all together and enjoyed! We definitely enjoyed this meal and would make it again. It’s hard to go wrong with tacos!

We decided to go with fried avocado Tacos…. We do a lot of fish tacos – which are amazing – but we thought we would branch out for the cook off and try something new.

But actually the most important part of tacos is the homemade tortillas…

Serve with cabbage/lime/cilantro “salad”, sautéed peppers and onions, mayo/sour cream/spicy goodness, lime and TADA!
